Hyderabadi Biryani
Hyderabadi Biryani is one of India's most celebrated rice dishes — a slow-cooked layered preparation of rice and meat (or vegetables) seasoned with saffron, whole spices, fried onions, and mint. It originates from the royal kitchens of the Asaf Jahi Nizams.
Dum Pukht Method
The defining technique is dum pukht — cooking sealed under a dough-covered lid over low heat, allowing the ingredients to steam in their own juices. This method developed in Hyderabad in the 18th century.
Two Styles
Kacchi (raw meat) biryani: Raw marinated meat and par-boiled rice are layered and cooked together over slow fire. This requires precise technique and is the traditional style.
Pakki (cooked) biryani: Meat is cooked separately before layering with rice. More forgiving and more commonly found in restaurants.
GI Tag
Hyderabadi Biryani does not currently hold a GI (Geographical Indication) tag — an ongoing discussion in culinary circles. The Irani Biryani variant from Secunderabad has distinct characteristics from the standard Hyderabadi style.
